Most homemade taco seasoning recipes are just a slightly better version of the packet. This one is different. Ground dried and milled chile peppers produce a complex depth of flavor that pre-ground chili powder simply can’t replicate. Combined with Mexican oregano (earthier and more aromatic than the Mediterranean variety most recipes call for), smoked paprika, and coriander, this is a truly unique Sonoran-Mexican spice blend.
I developed this recipe while writing my Taste of Tucson cookbook, where I spent years learning the spice traditions of the Sonoran Desert region spanning southern Arizona and northern Mexico. Once you taste the difference that freshly milled chile powder makes, it’s hard to go back to the store-bought stuff.
Ingredients
- ¼ cup ground chile peppers
- 3 tablespoons dried onion flakes
- 1 tablespoon garlic powder
- 2 teaspoons Sonoran sea salt
- 2 teaspoons dried Mexican oregano
- 2 teaspoons hot or mild smoked paprika
- 1 teaspoon ground coriander
- ½ teaspoon cayenne pepper

- Combine all of the ingredients in a sealed airtight container; shake to combine.
