The Bee's Knees is prohibition era, honey and lemon flavored Gin cocktail featured in the speakeasy scene visited by Jack and Elizabeth in Yellowstone's 1923. The cocktail was first developed to lessen the harshness of homemade bathtub Gin, and it tastes even better with a high-quality vintage-inspired Gin such as Ransom Old Tom Gin which is a historically accurate revival of the predominant Gin in fashion during this golden age of American cocktails.
Ingredients
- 2 oz Ransom Old Tom Gin
- 2 tsp honey
- 2-3 Tbsp freshly squeezed lemon juice
- Honeycomb for the bottom of the glass optional
- Lemon twist for serving
Instructions
- Put a tiny piece of honeycomb in the bottom of a martini glass for a little treat, if using.
- Fill a cocktail shaker with ice, then add the Gin, honey and lemon juice. Shake vigorously until the outside of the shaker becomes frosty then strain into the glass. Garnish with a lemon twist.
