The recipe for Strawberry and Habanero Infused Tequila takes about 24 hours to make. If you start a batch on a Friday afternoon, you’ll have enough for several rounds of margaritas by Saturday.
The black salt rim is not just for looks, though it is spectacular against the magenta of the prickly pear. Hawaiian black sea salt has a slightly mineral, almost smoky flavor that cuts through the sweetness and amplifies the heat from the habanero. It’s the finishing detail that ties the whole drink together.
Ingredients
- 1 ounce prickly pear juice or syrup use syrup if you want a sweeter drink
- 1 ounce Strawberry Habanero Tequila see recipe linked below
- juice from 2 lemons
- black-salt such as Hawaiian sea salt
- lemon wedge for garnish
Instructions
- Rim a glass with lemon juice, then press into black salt to coat.
- Fill a cocktail shaker with ice. Add the prickly pear juice or syrup, strawberry-habanero tequila, and fresh lemon juice. Shake vigorously until well chilled, about 15 seconds.
- Strain over fresh ice into the prepared glass. Garnish with a lemon wedge and serve immediately.
