Roasting green bean at high heat on a sheet pan caramelizes the beans slightly on the outside. The sheet pan method spreads them in a single layer which allows even heat circulation and prevents steaming. Shaking the pan occasionally during roasting ensures even browning on multiple sides.
The Ginger Addition
Fresh ginger adds a subtle warmth and brightness that’s distinct from the garlic. Together with the lemon juice added at the end and the Parmesan finish, the result is a green bean dish with more flavor complexity than its short ingredient list suggests.
Ingredients
- 1 lb green beans washed and trimmed
- Olive oil spray
- 2 large cloves garlic minced, about 1 Tbsp
- 1 Tbsp minced ginger
- 2 Tbsp butter cut into small pats
- Juice from 1 medium lemon about 2 Tbsp
- 1 tsp coarse sea salt
- 1 oz shredded Parmesan
Instructions
- Preheat the oven to 400 degrees F. Arrange the green beans in a single layer on a large baking sheet. Toss on the garlic and ginger, then spray the whole pan with olive oil. Roast for 25 minutes, shaking the pan occasionally so that the beans roll over.
- Squeeze the lemon over the green beans while they are in the hot pan.
- Transfer to a serving plate, top with pats of butter, sea salt, and Parmesan cheese.
