You may know that eating black-eyed peas on New Year’s day brings good luck in the new year. Black eyed peas which resemble coins symbolize wealth and prosperity. According to The Food Network, “some say you’ll have the best chance at luck if you eat exactly 365 black-eyed peas, one for each day of the year.”

Recipe for flavor filled and super-lucky Sonoran-style Charro (cowboy) Caviar made with black-eyed peas, bell peppers, Serrano chiles, and onions and served on corn tortilla chips.
Ingredients
- 1 lb black-eyed peas prepared according to package directions
- ¼ cup diced jalapeño or serrano chiles
- ½ cup diced red onion
- 1 cup diced yellow bell pepper
- Juice from 1 large lemon, about 3 Tbsp
- 1 tablespoon red wine vinegar
- Hot sauce to taste
- Tortilla chips for serving
Instructions
- Combine all ingredients except chips in a large bowl. Refrigerate for an hour to let the flavors meld. Serve with chips for scooping.
